Drainage Management in a Commercial Kitchen

In order for a commercial kitchen to run efficiently and safely, effective drainage is essential. Operationally, it helps prevent accidents and hygienically it contributes to safe production and preparation of food.

Food Storage Area

These areas require an occasional clean down either as part of a planned programme or in case of spillage. In many cases, the capacity of the floor drain need only accommodate low flows.

The production area is the busy heart of a kitchen (where potentially most slips and falls can occur) and requires the strategic positioning of floor drainage to aid in the removal of water that is being used in, or discharges from, specialist cooking equipment such as bratt pans, boiling pans and combination ovens.

The Washing and Disposal Area
